Spice-Grilled Steaks

Main Courses - Spice-Grilled Steaks

These very quick steaks get a fabulous spicy-smoky flavor from the rub. If you don’t have an outdoor grill, the steaks can be cooked in a grill pan, which looks like a nonstick skillet with raised ridges on the bottom. New York strip steaks, a very tender cut of beef, also are known as shell steaks, strip steaks or Delmonico steaks.
1 garlic clove, minced
1 tablespoon lime juice
2 teaspoons chili powder
1/2 teaspoon ground coriander
1/2 teaspoon kosher (coarse) salt
1/8 teaspoon freshly ground pepper
2 New York strip steaks (1 inch thick)

1. In small bowl, stir together garlic, lime juice, chili powder, coriander, salt and pepper. Spread over both sides of steaks. Cover and refrigerate at least 30 minutes or up to 1 hour.

2. Heat grill. Place steaks on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals; cover grill. Grill 8 to 10 minutes for medium-rare or until of desired doneness, turning once.
